Helpful recipe tips
- The longer you bake these the more cake-like they will be. Undercook them slightly for more of that underbaked brownie-like texture.
- Allow them to cool fully so that they are easier to cut and handle.
Storing
The lemon brownies will keep for about 2 days. They are shelf stable but they can be stored in the fridge to keep them possibly up to a week.

Lemon Brownies
Lemon brownies are a sweet twist on brownies giving them a citrus hint of lemon. Finished with a delicious icing to make these brownies even better!

- 8×8 baking dish
Ingredients
- 2 large egg
- 1 cup granulated sugar
- 8 tablespoon butter (melted)
- 1 teaspoon vanilla
- 2 lemon (zested)
- 1 cup all purpose flour (120g)
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
Icing
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350℉.
- In a bowl, melt the butter and allow it to cool a bit. Next, add in the eggs, sugar, and the vanilla extract. Then, zest the 2 lemon into the wet ingredients and mix everything until incorporated.
- In another bowl, mix together the flour, salt and baking powder. Then, combine the dry and wet ingredients.
- Pour the batter into the baking dish, then place into the oven. Bake for 20-25 minutes. Allowing them to undercook slightly will give more of the underbaked brownie feel. The longer they bake the more cake-like they'll be.
- Remove from oven and allow them to cool completely.
- Before serving, whisk together the ingredients for the icing until smooth then spread over the cooled lemon brownies. Once the icing has set, cut then serve.
