Keto granola is easy to make at home and you can keep those big clusters that get crushed in the store bought brands. Great for a healthy breakfast with yogurt or unsweetened almond milk this low carb granola is crunchy with a hint of natural sweetness.

Granola is one of my weaknesses. So, to still be able to have it on the keto diet I am more than happy. There are several brands that you can buy and I do from time to time. But, making granola at home is easier than you think. Not to mention, you can experiment with flavor. I made a blueberry flavored granola from my girlfriend and it was full of blueberry flavor.

What Is Granola

Granola comes in so many different forms from bars, clusters or just plain nuts almost pulverized. A mix of nuts and each recipe and brand ranges from what nuts they choose to use. Traditional granola will have oats in it as well. But, for keto oats aren’t a great idea. You can use them lightly such in oatmeal cookies. Granola is held together by sugar or a syrup, typically.

Is Granola Keto

Keto friendly granola is ok on keto. Stay clear from anything that doesn’t have keto approved or sugar free on the bag. Typically granola is full of oats and sugar because they use either sugar, syrup or honey to sweeten the granola and hold it together. This recipe is all keto and free of sugar!

Ingredients In Granola

  • Almonds
  • Pumpkin seeds
  • Sunflower seeds
  • Pecans
  • Chia seeds
  • Sweetener
  • Unsalted butter

How To Make Keto Granola

To start, you’ll need to crush the nuts in a food processor. I would advise against doing them all at the same time. I see many recipes that call for this. The problem is all nuts don’t have the same hardness. You want all the nuts coarsely chopped evenly. Adding them at the same time will shred the lighter nuts to bits and they stay around the blades.

Now, once you have ground the nuts individually add them into a bowl. Give them a quick mix just so they are even.

Then, move to the stove top. Add in unsalted butter and let it melt a little. I created brown butter but if you have no experience a great video to view you’ll find with my keto caramel sauce.

Once butter is melted add in sweeteners, cinnamon, salt, vanilla extract and finally egg white powder.

It’ll look a little grainy but that will melt down in the oven.

Next, pour everything over the nuts and seeds. Give it a good even coating and on a baking sheet lined with parchment paper pat it all down firmly.

Then, bake for 25-30 minutes. Remove from oven and allow to cool completely before breaking it apart. While hot it’s very fragile.

Helpful Recipe Tips

  • Don’t rush, when you remove it from the oven cooking you have to give it time to cool. Allowing the egg whites to harden the mixture to create those clusters we love.
  • Best sweeteners, I used Besti brown sugar which has no aftertaste. But, Swerve is great! I just recommend you mix Swerve with another sweetener to avoid that aftertaste. In this recipe erythritol actually works well because when it melts then cools again it crystalizes.
  • Skip egg white powder, this is what gives that great hold and keeps your clusters together. It helps with the crunch as well but it can be skipped.

Ingredients
 

  • 4 ounce almonds
  • 3 ounce sunflower seeds
  • 5 ounces pumpkin seeds
  • 3 ounces pecan
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1 tablespoon chia seeds (optional)
  • 5 tablespoon unsalted butter
  • 1/2 cup Besti brown sugar (see notes)
  • 3 tablespoon egg white powder
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions
 

  • Roughly chop almonds, pumpkin seeds and pecans indiviually. Don't combine them all because the pumpkin seeds and pecan will turn into dust if mixed with almonds
  • In a bowl add all seeds, nuts and coconut. Mix them around a little to get them even
  • In a small pot on medium heat melt butter. I browned the butter which is a method to give the butter a nutty flavor. Once butter is browned add sweetener, vanilla, cinnamon and salt. Give a good mix then add in egg white powder. Mix will look a little grainy but no worries it'll melt smooth in the oven
  • Pour on top of your nuts and mix evenly
  • On a baking sheet lined with parchment paper add granola and pat down firmly
  • Bake at 350°F for 25 minutes then remove and allow to cool fully before breaking the granola into chunks.

  1. If you’d like to, sure. But note, the egg white powder has had all the moisture removed. The extra dryness will result in a crunchier granola.

    I LOVE this granola. I find I snack on it through out the day instead of just on my morning yogurt which I believe this has made my weight plateau! I did have to make a couple adjustments as I was converting your ounces to dry cup measurements and found the granola too wet. Now that I have started going be weight, it works better. Total user error! You mention in the recipe itself (not the blog post) ‘serving size’ but there is not a serving size amount noted. Can you provide please? Trying to determine how many carbs I am actually eating so I can revert to my weight loss goals.

  3. I will use the system to give an approximate amount because it’s hard to tell how much someone will eat in a serving. But, I’ll separate it in cups.

    Has become my go to granola recipe. I lower the temp to 300 and add 1/4 cup walnuts instead of coconut, but so good! I make at least once a week.
