Keto broccoli salad is so refreshing and great for a light lunch, picnics or those summer cookouts during warm weather. This one dish recipe is easily made and loaded with delicious whole foods from broccoli, onion, sunflower seeds and cheese in a delicious mayo dressing!

Light foods doing summer months or great. Yet, just as good during winter months such as pasta salads at potlucks, family get togethers or Thanksgiving. Broccoli salad is no different but unlike pasta broccoli is great on keto. No added sugar because that is normally the culprit that makes broccoli salad and issue but I show a natural way to sweeten this healthy salad to keep it delicious!

Yes, broccoli is a low carb super food that is only 4g net carbs for an entire cup. You don’t have to miss out on all between flavor or nutrients this cruciferious vegetable brings.

Do You Cook Broccoli For Salad

This is debatable and to personal liking. A short answer is no. But, if the broccoli being raw to you is too much some people do blanch their broccoli. Which means you put on a pot of boiling water then toss in the broccoli at the boiling point. Leave in no more than a minute or two to soften slightly then remove. You want a slight crunch at minimum in this recipe. Soft broccoli will tear as you try to spoon it and you’ll want to avoid that.

 

How To Make Keto Broccoli Salad

First, grab the cutting board to dice up red cabbage. I used broccoli crowns and cut off the florets but you can buy just the florets by itself.

Next, I personally like to shred my own cheese but buying shredded is no issue in this recipe. Toss everything together in a salad or mixing bowl.

Now, in a separate bowl make you broccoli salad dressing to pour on top.

Whip the mayo, vinegar, keto granulated sweetener, salt, pepper and mustard together.

Then, pour on top of everything that was mixed in your salad bowl. You can serve immediately but it is better if you cover it and place the broccoli salad in the refrigerator a few hours, about two.

Helpful Recipe Tips

  • Should you blanch the broccoli, this isn’t needed but if raw broccoli it too crunchy for you then do it. Bring water to a boil then drop broccoli in for 1-2 minutes nothing more then remove.
  • Make ahead, this is one of those perfect recipes to make ahead because it gets better as it sits.

Ingredients
 

  • 12 ounces broccoli florets
  • 1/2 diced red onion
  • 1 ounce sunflower seeds
  • 1/2 cup shredded cheese
  • 4 strips chopped bacon

Dressing

  • 1/4 cup mayo
  • 2 tablespoon granulated sweetener
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Save bacon until you are ready to serve to keep it crispy and retain it's natural flavor
  • Dice onion, chop broccoli and shred cheese. Add all ingredients into a salad bowl then make dressing
  • When making dressing mix everything together smoothly then add to salad bowl
  • Toss ingredients around in dressing. I suggest allowing flavors to work togther by covering the bowl and refrigerating for at least 2 hours.
  • Once done sitting, cook and chop up bacon. Add into the salad, give it a good mix and serve.

Helpful Recipe Tips

  • Remove some broccoli, if the broccoli is overpowering the other ingredients remove a few pieces. I personally had to remove about 5 florets but the weight doesn't reflect this.
