Hawaiian chicken stuffed bell peppers are a simple dinner recipe that takes bell peppers and stuffed them with juicy chicken, pineapple chunks and rice tossed in a sweet Hawaiian-style sauce.

- How they taste: The Hawaiian chicken stuffed bell peppers range from sweet to earthy depending on which color you choose. The Hawaiian sauce has ketchup, pineapple juice and a touch of soy sauce so it has a sweet, tropical finish to it.
- Skill level: You’ll need to know how to cut the bell peppers and chose the best ones for the recipe but overall a beginner can make these with little mistakes. It’ll be hard to mess these up and they “not” come out tasting delicious.
- Storing: Leftovers can be kept in the fridge or frozen. The bell pepper texture will change slightly once thawed but the flavors will remain.
Ingredient tips
- Chicken: For the recipe I played with shredded chicken, and sautéed chicken on the stove top. In the instructions I will write shredded chicken like from a rotisserie chicken from the store because it’s the easiest. However, if you have the time grilled or seared chicken will produce the best flavor in the recipe. Grilled chicken is super popular in Hawaiian recipes and for good reason.
- Pineapple: For ease I use pineapple chunks from the can but if you can get your hands on a delicious fresh pineapple that’s sweet please run in that direction. I’ve found canned pineapple to be hit and miss as pineapples in the store when it comes to flavor.
- The sauce: Any substitutions with the sauce will change the recipe and I don’t recommend.
- Rice: The rice is super flavor with the addition of coconut milk. But, if you do not have any on hand the recipe will still be good if you cook the rice in water or add a bouillon cube for extra flavor.
- Bell peppers: They range in flavors from earthy to really sweet. Green bell peppers are the earthy ones and the yellow and orange are the sweetest. This will come down to personal taste but choosing many as in the photos will give you a different experience with each one.

Hawaiian Chicken Stuffed Bell Peppers
Hawaiian chicken stuffed bell peppers are a simple dinner recipe that takes bell peppers and stuffed them with juicy chicken, pineapple chunks and rice tossed in a sweet Hawaiian-style sauce.
Ingredients
- 5 bell peppers
- 1 pound shredded chicken
- 1-2 cup pineapple (chunks)
Rice
- 1 cup white rice
- 3/4 cup coconut milk
- 3/4 cup water
- salt to taste
Sauce
- 1/2 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup brown sugar (light)
- 5 clove garlic (minced)
- 2 teaspoon cornstarch
Instructions
- Preheat the oven to 425℉.
- Slice the bell peppers in half then place them cut-side face down on a lined sheet pan. Bake them for 15 minutes in the oven to release some of the water. When finished, salt the insides slightly and place them to the side to cool.
- Bring the water and coconut milk to a boil, add the rice, stir then immediately lower the heat to low and cover the pot. Allow the rice to cook for 20 minutes.
- While the rice is cooking make the sauce. Mix all the ingredients together in a pan and turn on the heat to medium. Continue to stir until the sauce has thickened. Once thickened, remove from the heat.
- Now, mix together the shredded chicken, rice, sauce and pineapple chunks. Spoon that mixture into the insides of the bell peppers. Lay them back on the sheet pan and spray the stuffed bell peppers with cooking oil. Place the pan in the oven and bake for 15 minutes to allow all the flavors to come together.
- Remove from the oven and allow to cool before serving.
