Ingredient tips
- Bell peppers: These range in flavors with the green having a very earthy flavor. I recommend on the sweeter side which will be the yellow or orange for the touch of sweetness. But, they all will work and give you a super tasty recipe.
- Chicken: Shredded chicken that’s already cooked or you can purchase a rotisserie chicken and shred it as well for the ease. Shredding chicken is easy and for this recipe you can just follow my instructions here. If you find yourself having leftover turkey, that can work as well for the recipe.
- Rice: The rice is flavored to enhance the overall flavoring. Any long-grain rice can work but my go-to are basmati or jasmine rice.
- Cheese: The cheese is optional but the feta and the mozzarella both add their special touch to the recipe. Feta is for the inside mix while the mozzarella is the creamy topping for the perfect cheese-pull.

Greek Chicken Stuffed Bell Peppers
Ingredients
- 3 bell peppers
- 12 ounce shredded chicken
- 1/4 cup feta cheese (crumbled)
Rice
- 1.75 cup water
- 1 cup rice (uncooked)
- 1 tablespoon oregano (dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
Sauce
- 2 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 1/4 cup lemon juice
- 1 tablespoon soy sauce
Topping
- 1/2 cup mozzarella cheese
Instructions
- Preheat oven to 425℉.
- Prep the rice and bell peppers first. Place the 1 3/4 cup water on the stove and bring to a boil. Then, add in the seasoning, next the rice. Give it a stir then cover and cook on low for 20 minutes. When done, fluff the rice and sat it to the side.
- For the bell peppers, slice them in half the long way then lay them cut-side down on a lined sheet pan. Place them in the oven and bake for 15 minutes. When done, remove them from the oven and allow them to cool while you make the rest of the recipe.
- In a pan on medium heat, add the butter and allow to melt. Once melted, add in the flour and whisk the flour and butter for about 1 minute. Now, pour in the broth then the lemon juice while whisking. Continue whisking until the sauce has thickened then turn off the heat. Now, add in the soy sauce and taste for seasoning to personal preference.
- In a bowl, toss together the cooked rice, sauce, chicken and feta cheese. Start filling the bell peppers then top with the mozzarella cheese.
- Place the filled bell peppers in the oven and cook of 15-20 minutes to melt the cheese. When finished, remove and allow to cool before serving.
