Quick tip before starting the recipe
This is a great recipe for an oven safe pot or pan. But, you can easily transfer everything to a baking dish below. A 16×9 baking dish will work perfectly and that is exactly what I did. But, this can be a one pot meal if planned properly.

Making the French onion chicken from the stove to the oven
- First, you want to cook the onions. Slice them thinly and add them to a pan with oil on medium heat. This will take some time for them to cook down and look the way they do in the photos. You want them caramelized and sticky.
- When the onions are done, remove them from the pan. Preheat the oven to 375F.
- Season the chicken with salt and pepper. Then, add a little oil to the pan and sear the chicken. You only want color on the chicken, it will finish cooking in the oven. Once seared transfer the chicken to a plate.
- Now, add in butter then flour. Whisk the flour in with butter to create a roux. Once bubbling a little add in the white wine. Allow the alcohol smell to disappear then pour in the beef broth.
- Scrape the sticky bit from the bottom of the pan. Next, add in the Worcestershire sauce, bouillon cube and herbs. Once the sauce has bubbled and thickened remove it from the heat.
- Carefully pour the sauce in the baking dish then add in the chicken. Top the chicken with the caramelized onions and lastly with shredded gruyere cheese. Place in oven and bake for 25 minutes. Check the chicken for doneness but that should be a perfect time.
- Allow to cool a bit before serving.
