How To Make Sour Cream Mashed Potatoes
Ingredients needed
- Russet potatoes
- Butter
- Sour cream
- Salt & pepper
- Fresh chives
Quick tip, my secret to perfect mashed potatoes
I have learned from many mashed potatoes recipes, a secret to the best potatoes are heated ingredients. They do not have to be boiling hot and for dairy they shouldn’t be. But, when the wet ingredients are room temperature or warm they mix much better. It’s possible to over mix mashed potatoes and warm ingredients to prevent this.
Making the mashed potatoes with sour cream
- First, peel and chop the potatoes. Try to chop the potatoes to even sizes, I did not write perfectly even but as even as possible.
- Ina large pot of water add the potatoes and bring to a boil, Once boiling add about 2 teaspoons of salt then lower the boil to a simmer and cover the pot. Cook for about 20-25 minutes.
- While cooking, place a small pot on the lowest heat setting and add in the butter and sour cream. They should just be warmed through. If you see steam they are too hot.
- When the potatoes are fork tender, drain the water and add the potatoes to a bowl.
- Mash them down a little then add in the warmed butter and sour cream. Mash them a little more just until you see the potatoes have absorbed the liquid. Then fold in salt, pepper and chives to taste. They are ready to serve, enjoy.

- salt & pepper to taste
