A Cookies And Cream Keto Fudge Game Changer

  • Now, we have real store bought cookies that you don’t have to bake
  • A creamy fudge that isn’t soft
  • Can be eaten frozen or out of the refrigerator 

How To Make Keto Fudge

  1. The cooking process is just like my previous keto fudge recipe. The exception is we aren’t using cocoa powder here. If you’d like you can actually play with a few of the ingredients and I will show you how below in my helpful tips.
  2. In a pot add your heavy cream on a low heat. Continue to stir looking for a little stem to rise. Then, add in cream cheese. The cream should never reach a full boil.

  3. Add in granulated or powdered sweetener along with vanilla extract. 
  4. Pull the pan off the heat. Add in cacao butter and mix until evenly distributed. Allow it too cool completely. A quick way is to just stick the pot in the refrigerator.
  5. Don’t allow it get solid. After cooled pull out and add in HighKey snacks brownie bites and fold in. Fold, do not stir. You don’t want to mix hardly where you lose chunks of your cookies.

Helpful Recipe Tips

  • Do not allow the heavy cream to boil. What will happen is something like seizing when the protein and fat clings together and the recipe will be a disaster.
  • Another reason not to allow too much heat is when adding the cocoa butter in the end. You want the heat high enough just to melt the butter. You can sub for regular butter but the fudge won’t get as hard but will still be edible and fudge-like.

  • Make sure to line your baking dish because this will stick to the pan. With parchment paper you can peel it away.

Equipment

  • 9x9 baking dish

Ingredients
 

  • 1/2 cup heavy cream
  • 2 ounces cream cheese
  • 52 grams cacao butter
  • 2-4 tablespoon granulated or powdered sweetener
  • 1 serving HighKey snacks brownie bites

Instructions
 

  • In a small sauce pan on low heat add heavy cream. Continue stirring. Allow to steam a little but do not bring to a boil.
  • Add in cream cheese, vanilla extract and sweetener
  • After melted down and combined evenly remove from heat. Toss in cacao butter and stir until mixed well.
  • Allow to cool. Refridgerate for faster cooling but don't let it harden.
  • Once cooled fold in Highkey snacks brownie bites
  • Place in lined 9x9 baking pan and allow to harden over a few hours. Then cut and serve
