How To Make Chicken And Potato Casserole

Ingredients needed

  • Potatoes
  • Cooked chicken
  • Shredded cheese
  • Cream of chicken
  • Sour cream
  • Corn
  • Salt & black pepper

Helpful tips before starting

  • For the best chicken, you can buy a rotisserie chicken and chop it up. Another option is to pan fry and sear chicken breast to get that extra flavor out of them.
  • The corn can be frozen or canned. They add a nice touch of sweetness and veggies to the dish.
  • The best potatoes for the recipe are going to be red or Yukon. They have a nice creamy texture and are not too starchy.

Making the cheesy chicken and potato casserole

  1. First, wash and slice the potatoes and prep the chicken. I like the chicken chopped nicely because it gets distributed throughout the casserole unlike big chunks.
  2. Preheat the oven to 375F.
  3. In a small bowl combine the cream of chicken with the sour cream. Then, in the baking dish add all the ingredients together minus the cheese. Give the mix a taste for salt and pepper.
  4. Cover the dish with foil then bake for 30 minutes. Cook the bacon while the dish is cooking, then chop it up. Remove the foil after the time is up for the casserole then add the cheese and bacon.
  5. Place the casserole back in the oven uncovered and allow the cheese to melt. This will take about 20 minutes.
  6. Lastly, allow the casserole to cool before serving.
