Ingredient tips

  • Flour: Use all-purpose flour for this recipe only. Anything else will change the cheddar bay butter swim biscuits because other flours have additives and different gluten strengths.
  • Butter: This recipe can be made with salted or unsalted butter. But, I recommend anyone who is sensitive to salt to use unsalted only because there is added salt in the recipe and the cheese is naturally salty.
  • Spices: You may be intrigued to use fresh ingredients like parsley and that is fine. However, the original cheddar bay biscuits do not use fresh ingredients at all and for a more authentic experience dried ingredients are best. It’s much more than the ease of the recipe, it’s about recreating the flavors we fell in love with.
  • Cheese: Grated cheese is best for the recipe. Not only for the melt but for the crispy edges as well. You can get away with pre-shredded cheese but the results will be better if you grate your own cheese. The non-caking agent prevents the cheese to melt with the butter and the melt with itself.

Tip for storing later

  • If you plan to make them and freeze for later that is fine. But, this isn’t a recipe to freeze the dough itself like regular biscuits. You must cook them first before freezing.

Serving instructions

These are not the typical breakfast biscuits. Due to the spices of the cheddar bay butter swim biscuits they are best served for dinner with complimenting flavors. Pastas work well like lemon ricotta pasta, risotto or dishes such as Tuscun butter salmon and pecan crusted salmon.

Equipment

  • 8×8 baking dish

Ingredients

  • 2.5 cup all-purpose flour (313g)
  • 4 teaspoon baking powder
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1.5 cup sharp cheddar cheese (shredded)
  • 2 cup buttermilk
  • 6 tablespoon butter (melted)

Topping

  • 3 tablespoon butter (melted)
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley

Instructions

  • Preheat the oven to 450℉.
  • In a bowl, mix together the flour, baking powder, shredded cheese and the seasonings. Then, add in the buttermilk and stir until everything is combined.
  • Place the baking dish in the oven with the 6 TB of butter and allow to melt. This also preheats the baking dish to help with the crispy edges.
  • Once the butter is melted, remove the dish then add in the biscuits mix. Carefully spread it out in the baking dish then using a knife, score the biscuits into 9 squares 3×3.
  • Place the dish back into the oven and bake for 20-25 minutes. The biscuits are done when the tops are golden but you can push it a little longer if you like a lot of browning on the top.
  • When done baking, remove from the oven. Melt the butter for the topping in the microwave and add in the seasonings. Brush the top of the biscuits with the seasoning and allow them to cool 10-15 minutes before serving
