How To Make Cajun Mac And Cheese

Ingredients needed

  • Macaroni pasta
  • Andouille sausage
  • Sharp cheddar cheese
  • Mozzarella cheese
  • Onion
  • Green bell pepper
  • Cajun seasoning
  • Evaporated milk
  • Heavy cream
  • Butter
  • All-purpose flour

  • You can swap the meat out for whatever you want with this recipe. Chicken works great in the place of the sausage. You can even go with ground beef and make it more of a hamburger helper style meal.
  • Be careful with the heat when cooking. Allow the pan or pot to cool a bit when going from sautéing the veggies to adding in the flour and dairy. Too much heat will cause the dairy to curdle and give you a very gritty, grainy cajun mac and cheese.
  • For the best texture, grate your own cheese and do not use pre-shredded cheese.

Making the cajun mac and cheese recipe

  1. To start, prep all the ingredients before starting. Then, brown the sausage on medium high heat. Once the sausage is seared, remove then add in the onion and green bell pepper.
  2. Cook the veggies until soft, and browning a little. Next, lower the heat to medium and add in the butter. Once the butter is melted, add in the flour then cook the flour with the veggies for about 2-3 minutes.
  3. Now, slowly add in the evaporated milk, little by little while mixing. Once all the milk is added slowly pour in the heavy cream as well.
  4. Season the cream sauce with the cajun season and continue stirring as it thickens. Gradually start to add the cheese into the sauce. Once the cheese has been added and its melted, turn off the heat and fold in the sausage. Taste the cheese sauce for seasoning.
  5. Lastly, cook the macaroni according to the package instructions. Drain the macaroni when finished and toss directly into the cheese sauce. Allow the macaroni to sit in the sauce at least 5 minutes before serving to soak up some of the sauce. Serve and enjoy.

  • 12 once pack of andouille sausage
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 tablespoon butter
  • 3 tablespoon all-purpose flour
  • 12 ounce evaporated milk
  • 2 cup heavy cream
  • 2 tablespoon cajun seasoning (add more to taste)
  • 8 ounce sharp cheddar cheese (makes 2 cups)
  • 8 ounce mozzarella cheese (makes 2 cups)
  • 16 ounce macaroni elbow, dry
