Cajun mac and cheese isn't just a side dish it's the perfect weeknight meal. Creamy mac and cheese mixed with andouille sausage, peppers and cajun style seasoning.
To start, prep all the ingredients before starting. Then, brown the sausage on medium high heat. Once the sausage is seared, remove then add in the onion and green bell pepper.
Cook the veggies until soft, and browning a little. Next, lower the heat to medium and add in the butter. Once the butter is melted, add in the flour then cook the flour with the veggies for about 2-3 minutes.
Now, slowly add in the evaporated milk, little by little while mixing. Once all the milk is added slowly pour in the heavy cream as well.
Season the cream sauce with the cajun season and continue stirring as it thickens. Gradually start to add the cheese into the sauce. Once the cheese has been added and its melted, turn off the heat and fold in the sausage. Taste the cheese sauce for seasoning.
Lastly, cook the macaroni according to the package instructions. Drain the macaroni when finished and toss directly into the cheese sauce. Allow the macaroni to sit in the sauce at least 5 minutes before serving to soak up some of the sauce. Serve and enjoy.
