How To Make Bisquick Blueberry Muffins

Ingredients needed

  • Bisquick or any pancake mix
  • Granulated sugar
  • Egg
  • Milk
  • Vegetable oil or butter
  • Blueberries (frozen or fresh)

Difference between fresh and frozen blueberries

Frozen blueberries are the best all-around for convenience. But, if you’re able to find flavorful fresh blueberries, they are the best. Frozen blueberries will also “bleed” a little causing a change in color but it’s not too bad unless you care about presentation. Personally, I opt for fresh when in season and I can find the small wild blueberries from the farmer’s market.

Quick tip, if using frozen blueberries, do not thaw them before hand. Toss them in the batter frozen.

Making the Bisquick blueberry muffins recipe

  1. Fist, preheat the oven to 400F.
  2. Now, in a bowl whisk the egg, milk and vegetable oil together. In a separate bowl, mix the Bisquick mix with the granulated sugar. Combine the dry and wet then fold in the blueberries.
  3. In a 12-count muffin tin lined drop the batter in each until about 3/4 of the way. Place in the oven and bake for 15 minutes or until golden, risen and a toothpick could be inserted and come out clean.
  4. Allow to cool at least until warm before serving, then enjoy.
