Ingredients you’ll need
- Breakfast sausage
- Egg
- Sour cream or milk
- Peppered gravy mix
- Canned biscuits
Helpful tips for the recipe
- The reason you can use sour cream or milk is because they both work. But in my experience, sour cream creates a luscious egg casserole. The texture is much creamier than using milk, but milk works too.
- I suggest canned biscuits over frozen biscuits here because you want them to rise and get fluffy. You can use a fresh biscuit dough like from pancake mix but frozen I do not recommend.
- Warning, do not lower the oven temperature below 400F. I have tested this recipe and the biscuits never cook in the center properly at lower temperatures.

Making the biscuits and gravy breakfast casserole recipe
- Preheat the oven to 425F.
- In a skillet or frying pan, cook the sausage completely then set aside.
- In the baking dish, like the biscuits then press them down into the pan and close the creases with your thumbs. An example of this is below in the photo.
- In a bowl, combine the eggs and sour cream. Season the eggs to taste with salt and pepper.
- Pour the egg mix across the biscuits then sprinkle the cooked sausage over the baking dish. Place in the oven for 20-25 minutes.
- While baking, make the gravy according to the package instructions on the stove top.
- When the casserole is done cooking, remove it from the oven. Spread the gravy across the top of the casserole then allow the casserole to cool before serving, enjoy.
