- Bacon
- Velveeta cheese (see tips)
- Cheddar cheese
- Salt & black pepper

- While the potatoes are cooking or cooling prepare the bacon. Cook the bacon then chop it up into bits. Also, in a microwave safe bowl melt the velveeta cheese right before the next step. If you are using something like Cheez whiz you will not have to do this.
- Now once the potatoes are cool, slice them half the long way and use a spoon to scoop out a part of the center. Do not scoop all the way down to the skin.
