  • 4 medium russet potatoes
  • 3 strips bacon, chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 2 ounces velveeta cheese, melted (sub with cheese sauce)

Instructions
 

  • To start, you need cooked potatoes. Place the air fryer on 400℉ then add in washed potatoes for 35 minutes. This will give you perfect air fryer potatoes. When they are ready you can easily pierce them with a fork. Allow them to cool before handling them.
  • While the potatoes are cooking or cooling prepare the bacon. Cook the bacon then chop it up into bits. Also, in a microwave safe bowl melt the velveeta cheese right before the next step. If you are using something like Cheez whiz you will not have to do this.
  • Now once the potatoes are cool, slice them half the long way and use a spoon to scoop out a part of the center. Do not scoop all the way down to the skin. Potato skins still have potato in them so be carful when making the little boats. Lightly season with salt and pepper before adding in the filling.
  • Place a dollop of cheese sauce in each potato skin then add shredded cheese on top with the bacon bits.
  • Preheat the air fryer to 350℉.
  • After all the potato skins are ready place them back in the air fryer for 5-7 minutes. Allow to cool a bit because the inside will be hot.
