Ingredients needed
- Leftover turkey
- Onion
- Garlic
- Frozen mixed vegetables
- Potatoes
- Diced tomatoes
- Chicken broth
- Balsamic vinegar
- Tomato sauce
- Seasonings (listed below)
Making the turkey vegetable soup with leftover turkey
- First, chop up the leftover turkey you have. You can also leave the skin on for this recipe for added flavor.
- Now, in a pot you want to add in the chopped onion and garlic. Cook both of these until fragrant and softened.
- Next, add in the chopped potatoes, diced tomatoes and the chopped turkey. Then, season everything with salt and pepper then add in the Italian seasoning. You can add more salt and pepper later but cannot take it away, careful.
- Add in frozen mixed vegetables, tomato sauce and the chicken broth. Next, add in the balsamic vinegar.
- Bring the pot to a boil then lower to a simmer and cover. Allow the soup to simmer for 20-25 minutes or until the potatoes are soft.
- Lastly, season the soup to taste before serving. Enjoy.
