Ingredients
 

  • 2 pound russet potatoes, peeled & chopped
  • 8 tablespoon butter (= 1 stick)
  • 1/2 cup sour cream
  • chopped chives to taste
  • salt & pepper to taste

Instructions
 

  • First, peel and chop the potatoes. Try to chop the potatoes to even sizes, I did not write perfectly even but as even as possible.
  • In a large pot of water add the potatoes and bring to a boil, Once boiling add about 2 teaspoons of salt then lower the boil to a simmer and cover the pot. Cook for about 20-25 minutes.
  • While cooking, place a small pot on the lowest heat setting and add in the butter and sour cream. They should just be warmed through. If you see steam they are too hot.
  • When the potatoes are fork tender, drain the water and add the potatoes to a bowl.
  • Mash them down a little then add in the warmed butter and sour cream. Mash them a little more just until you see the potatoes have absorbed the liquid. Then fold in salt, pepper and chives to taste. They are ready to serve, enjoy.
