Ingredients needed
- Baby Yukon potatoes
- Salt & black pepper
- Italian seasoning
- Butter
- Neutral flavored oil (vegetable, olive, soybean cooking oil, etc)

I know you will be tempted to toss in butter or add the butter at the beginning but this is a mistake. Think about a steak or risotto, you finish with butter for it to really shine. Adding the butter at the very end allows the butter to mix with the mini potatoes for a short period but enough time for the butter to brown and get that nutty flavor infused into the meal.

- Preheat the oven to 400F.
- Next, slice the baby potatoes down the center. Then toss in oil and add in the seasonings and herbs.
- Oil the sheet pan lightly as well. Then, place the prepped potatoes in the sheet pan cut-side down.
- Bake in the preheat oven for 30 minutes. Next, add in melted butter and swirl around the pan making sure the butter hits each potato then place back into the oven for 10 final minutes.
