First, bring a large pot of water to a boil. Carefully place the washed red potatoes in and cover for 20 minutes or until a butter knife easily slides into the potatoes.
Now, while the potatoes are cooking take the heavy cream and butter and add it to the stove top on a low heat. There should be no steam. Simply a gentle heat to melt the butter over time and warm up the heavy cream.
When the red potatoes are done cooking drain them. Next, place in a large bowl. Using a potato masher, mash them just a little.
Then, add in the melted butter and heavy cream. Continue mashing the potatoes until the majority of the cream and butter are absorbed.
Lastly, fold in the herbs along with salt and pepper to taste.
