Ingredients

  • 2 pound red potatoes
  • 1/2 cup butter 8 tablespoons
  • 1/2 cup heavy cream
  • 1 tablespoon fresh rosemary, chopped finely
  • salt & pepper to taste

Instructions

  • First, bring a large pot of water to a boil. Carefully place the washed red potatoes in and cover for 20 minutes or until a butter knife easily slides into the potatoes.
  • Now, while the potatoes are cooking take the heavy cream and butter and add it to the stove top on a low heat. There should be no steam. Simply a gentle heat to melt the butter over time and warm up the heavy cream.
  • When the red potatoes are done cooking drain them. Next, place in a large bowl. Using a potato masher, mash them just a little.
  • Then, add in the melted butter and heavy cream. Continue mashing the potatoes until the majority of the cream and butter are absorbed.
  • Lastly, fold in the herbs along with salt and pepper to taste.
