I have had my share of keto pancakes with coconut flour and almond flour. They don’t seem to mix too well in a quick cooking situation. So, for this application one or the other will do.

As far as experience goes coconut flour reigns king for the fluffiest keto pancakes. Yes, coconut flour is drier than almond flour. That reason is why they work so well in making the best pancakes.

Almond flour pancakes tend to be flat and lifeless. Combining flaxseed meal, chia seeds or psyllium husk can help with bulk but they make them extra grainy tasting. And we all want the tastiest pancakes close to the real thing.

Keto pancakes with coconut flour have a few simple ingredients:

  • Coconut flour
  • Cream Cheese
  • Eggs
  • Granulated Sweetener
  • Fresh Blueberries

How to make keto pancakes with coconut flour

  1. Mix together your dry ingredients of coconut flour, baking powder and ground cinnamon.mix all dry ingredients
  2. Your wet ingredients are eggs, vanilla extract, unsweetened almond milk and melted butter. Mix those next.combine wet ingredients
  3. Combine dry and wet ingredients and add in one teaspoon of the blueberry topping. Slightly fold in just enough to create a swirl pattern.fold in blueberry topping into batter
  4. In a skillet, add in a heaping tablespoon of batter onto buttered skillet. You may have to spread it a little. As edges firm and you see a few bubbles on top flip pancakes. Finish cooking on other side.
  5. Remove from skillet and top with remaining blueberry sauce, sugar-free maple syrup or both.

What to top keto pancakes with?

That’s easy! There are so many options from store-bought syrups to homemade. Two great sugar-free syrups I use are Lakanto and Choczero. But here I also created a blueberry sauce topping that’s easy to make on your own.

In all honesty nothing is like that maple syrup on top. But, these are your coconut flour pancakes make them as you like.

Dairy-free option

If you are avoiding dairy replacing cream cheese with dairy free cream cheese is perfect. They work great when subbing for each other!

Ingredients
 

coconut flour pancakes

  • 3 tablespoon Coconut flour
  • 1 tablespoon granulated sweetener
  • 1/2 teaspoon Baking Powder
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 ounces full fat cream cheese
  • 1/8 teaspoon salt

blueberry sauce topping

  • 40 grams fresh blueberries
  • 1 tablespoon Granulated sweetener
  • pinch xanthan gum or guar gum

Instructions
 

Blueberry sauce topping

  • Make blueberry sauce first
  • Mix the sweetener with a little xanthan gum prior to cooking to avoid lumping. Just a pinch, if you have a 1/8 tsp measuring spoon use about half of that. The full thing is too much
  • Get all ingredients together and have beside you to grab them quickly. Add blueberries into a small pot on medium/low heat stirring often to avoid sticking.
  • Blueberries will darken, smash a few or all of them
  • Add in sweetener and xanthan gum mix then continue to mxi until sauce thickens. You will know because your spoon will begin to be coated by sauce along with visual cues. As it cools it'll get even thicker

Pancakes

  • Mix together your dry ingredients of coconut flour, granulated sweetener, baking powder and salt.
  • Whisk egg into room temp cream cheese. Then add vanilla extract
  • Combine dry and wet ingredients and add in half or all of the blueberry topping. Slightly fold in just enough to create a swirl pattern.
  • In a skillet, add in a heaping tablespoon of batter onto buttered skillet. You may have to spread it a little. As edges firm and you see a few bubbles on top flip pancakes. Finish cooking on other side.
  • Remove from skillet and top with remaining blueberry sauce, sugar free maple syrup or both.

Notes

Dairy-free option

If you are avoiding dairy replacing cream cheese with dairy free cream cheese is perfect!
To bring cream cheese to room temp quickly. Place package inside a warm bowl of water for 10-15 minutes. Or place amount needed in a plastic bag and submerge in warm water.

  1. Does this recipe make 2 pancakes? I am a little confused, it never says how many pancakes, just serving 2 people. Thank you.

  2. Yes you can make 4 pancakes total. But that will vary with if you allow your batter to sit or if you use too little liquid. The thicker the batter the more you will lean towards 3 pancakes than 4
