Ingredients needed

  • Potatoes
  • Mayonnaise
  • Sour cream
  • Bacon
  • Green onion
  • Shredded cheese
  • Dijon mustard
  • White vinegar
  • Herb (green onions or chives)

Quick tips for the recipe before starting

  • If you only have normal shredded cheese that will be fine. But, I suggest getting a super fine shredded cheese or grating your own finely. This will help the cheese to really work its way into every bite when serving. Even better if you can add the cheese when the potatoes are still hot. This way it can melt a little into the dressing.
  • Should you peel the potatoes before or after cooking? This is all personal preference. Neither will hurt anything in the end result. Personally, I like to peel after the potatoes are cooked and cooled. When boiling potatoes that you have peeled they fall apart much more in the water.

Making the loaded potato salad quickly

  1. First, you’ll need to boil the potatoes with the lid on for about 30-40 minutes or until the potatoes are easily pierced with a fork. The smaller the potato the quicker they cook.
  2. While the potatoes are cooking make the bacon and chop it up.
  3. Now, when the potatoes are done. Chop then into chunks.
  4. Separately, combine the mayo, sour cream and dijon mustard together.
  5. Then in a salad bowl, add the potatoes then pour in the vinegar. Mix the potatoes around to absorb the vinegar then add in the dressing you made with the mayo.
  6. Combine everything together then add in the shredded cheese, bacon bite and your herb.
  7. After mixing everything together add salt and pepper to taste then serve.

  • 1/4 cup chives or green onion (green parts only)
  • 1 cup shredded cheddar cheese
  • 2 tablespoon white vinegar

  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tablespoon dijon mustard
