Ingredients
 

  • 2 pounds potatoes
  • 5 strips bacon, chopped
  • 1/4 cup chives or green onion (green parts only)
  • 1 cup shredded cheddar cheese
  • 2 tablespoon white vinegar

Dressing

  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tablespoon dijon mustard

Instructions
 

  • First, you'll need to boil the potatoes with the lid on for about 30-40 minutes or until the potatoes are easily pierced with a fork. The smaller the potato the quicker they cook.
  • While the potatoes are cooking make the bacon and chop it up.
  • Now, when the potatoes are done. Chop then into chunks.
  • Separately, combine the mayo, sour cream and dijon mustard together.
  • Then in a salad bowl, add the potatoes then pour in the vinegar. Mix the potatoes around to absorb the vinegar then add in the dressing you made with the mayo.
  • Combine everything together then add in the shredded cheese, bacon bite and your herb.
  • After mixing everything together add salt and pepper to taste then serve.
