La scala salad

A brief history on this salad that has been around for over 50 years.

What is la scala salad

La scala* is a restaurant in Beverly Hills. Until this day the la scala chopped salad is still on their menu. It recently gained a ton of attention as the “Kardashian salad” and for good reason.

It’s a very simple salad recipe but it’s sooooo good. As a chef, the most simple things are always the best. Anytime I see a cook making things complicated I know they’re a rookie or uninformed on how flavors work.

Leon’s dressing is a delicious vinaigrette dressing featuring red wine vinegar, olive oil, mustard and pecorino romano. Do not confuse the parmesan and romano, they are both hard cheese but one is made with sheep’s milk the other cow’s milk.

Enough back story, let’s dive into how easy it is to make the la scala salad.

How To Make La Scala Salad

Grab these easy to find ingredients

  • Iceberg lettuce
  • Romano lettuce
  • Salami
  • Chickpeas
  • Mozzarella
  • Olive Oil
  • Red wine vinegar
  • Dijon mustard
  • Pecorino romano
  • Salt & black pepper

A few tips before starting

  • For this recipe I combined iceberg lettuce and romaine for texture and taste. You do not have to do this, you can easily use all of one.
  • I suggested grated pecorino romano because the mozzarella cheese is already shredded. Using the grated hard cheese will evenly get flavor in each bite.
  • Traditionally, the chickpeas are marinated in the sauce. I skipped this step.

  1. To start, chop and wash the lettuce. Pat dry the lettuce then place in a large salad bowl.
  2. Now, make the dressing. In a small bowl add dijon mustard and olive oil, then add in the red wine vinegar and lastly the grated romano cheese.
  3. It’s best to use a hard salami and slice it yourself for chunk pieces. Slice and chop the salami and set the side.
  4. Next, grab a can of chickpeas or garbanzo beans, drain and rinse them.
  5. Then, inside the bowl with the washed lettuce add in the chickpeas, salami and shredded mozzarella cheese. Now, pour over the dressing and toss the salad until everything is covered.
  6. Now, salt and black pepper to taste. Serve immediately.

Are the leftovers any good

This la scala chopped salad will keep in the fridge for 3 days depending on the freshness of the ingredients. This is a great salad for meal prep or to be made ahead because of the dressing. The longer it sits the better.
