- Iceberg lettuce
- Romano lettuce
- Salami
- Chickpeas
- Mozzarella
- Olive Oil
- Red wine vinegar
- Dijon mustard
- Pecorino romano
- Salt & black pepper
A few tips before starting
- For this recipe I combined iceberg lettuce and romaine for texture and taste. You do not have to do this, you can easily use all of one.
- I suggested grated pecorino romano because the mozzarella cheese is already shredded. Using the grated hard cheese will evenly get flavor in each bite.
- Traditionally, the chickpeas are marinated in the sauce. I skipped this step.

Making the la scala salad
- To start, chop and wash the lettuce. Pat dry the lettuce then place in a large salad bowl.
- Now, make the dressing. In a small bowl add dijon mustard and olive oil, then add in the red wine vinegar and lastly the grated romano cheese.
- It’s best to use a hard salami and slice it yourself for chunk pieces. Slice and chop the salami and set the side.
- Next, grab a can of chickpeas or garbanzo beans, drain and rinse them.
- Then, inside the bowl with the washed lettuce add in the chickpeas, salami and shredded mozzarella cheese. Now, pour over the dressing and toss the salad until everything is covered.
- Now, salt and black pepper to taste. Serve immediately.
Are the leftovers any good
This la scala chopped salad will keep in the fridge for 3 days depending on the freshness of the ingredients. This is a great salad for meal prep or to be made ahead because of the dressing. The longer it sits the better.
