Ingredients
 

  • 3 cup iceberg lettuce, chopped (225g)
  • 2 cup romaine lettuce, chopped (150g)
  • 3 ounce salami, chopped
  • 1.5 cup chickpea, drained & rinsed
  • 3/4 cup part-skim milk mozzarella, shredded

Dressing

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoon dijon mustard
  • 1/4 cup pecorino romano, grated

Instructions
 

  • To start, chop and wash the lettuce. Pat dry the lettuce then place in a large salad bowl.
  • Now, make the dressing. In a small bowl add dijon mustard and olive oil, then add in the red wine vinegar and lastly the grated romano cheese.
  • It's best to use a hard salami and slice it yourself for chunk pieces. Slice and chop the salami and set the side.
  • Next, grab a can of chickpeas or garbanzo beans, drain and rinse them.
  • Then, inside the bowl with the washed lettuce add in the chickpeas, salami and shredded mozzarella cheese. Now, pour over the dressing and toss the salad until everything is covered.
  • Now, salt and black pepper to taste. Serve immediately.
