Cauliflower mac and cheese seems to be a go to low carb side. What about if we added Kraft cheese powder into it? Not only is it a easy to make dish but its keto friendly and low carb. All the bills, due dates, relationship problems and constantly having something to do with zero energy seems to be the name of the game.
What if we could only revisit childhood just for a day. Somehow time travel isn’t possible…as far as I know. So the euphoria that can be accessed is sometimes in a childhood place, tv show, or a meal.
So, ladies and gents my recipe for Kraft cauliflower mac and cheese!
What led me to this you ask, maybe even what separates it from standard cauliflower mac and cheese?
It’s the Kraft part duh???
Your typical cauliflower mac and cheese is great, but don’t get me wrong now. Something about a quick delicious meal just hits the spot for me personally. I’m not sure if it’s the speed or the fact that it taste that way so fast, just intriguing isn’t it? And relevant to our childhoods!
I knew I had to have that sticky powered cheese but worried would the macros be a issue. See dehydration of things tends to up the sugars on average. Therefore, something that is dehydrated is just absorbed in the body better without getting all scientific, but you know I don’t mind!
As much as I love talking let’s make this as simple as possible, here is your ingredient list:
Frozen cauliflower rice (1 cup)
Cheddar cheese powder ( 1.5 TB)
Xanthan gum (1/8 tsp)
Salt (1/8 tsp)
Hot water (1 TB)
You can find the powered cheese here, those of us in the small towns don’t have access to these things. There are also more options than what I chose, I just like that particular brand.
In no particular order toss all these ingredients into the bowl. Personally I would do the cauliflower before the cheese, I’m just saying.

Ingredients
- 1 cup Cauliflower rice
- 1.5 TB Cheddar cheese powder (BUY HERE)
- 1 TB Hot water
- 1/8 tsp Xanthan gum
- 1/8 tsp Salt
Instructions
- In no particular order toss all these ingredients into the bowl. Personally I would do the cauliflower before the cheese
