Summer salad recipes are something I think we all look forward to. Broccoli salad is great, the classic chicken salad is just as refreshing for something light and tasty on a hot day. Missing out of picnics and cookouts are not ideal because you feel miserable. You don’t have to and you can bring this dish and no one will tell a difference and it still be delicious.

At almost 95% water a medium cucumber is only 4g net carbs each via WebMD. That means, yes they are very keto friendly. Not to mention an easy way to sneak in more water and actually have some flavor behind it all.

How To Cut Cumbers For Salad

This is a great question that people ask and it depends. In the photos I sliced very thinly with a veggie slicer. I would actually recommend you slice thicker than what you see in the photos, see notes below. Yet, you don’t want them so thick you can barely crunch down on them. I say a ideal thickness is about 1/4 inch. Skin on or skin off that doesn’t matter in flavor. The skin can be a little tough.

How To Make Keto Cucumber Salad

To start, slice cucumbers and red onion into about 1/4 inch slices.

Next, in a bowl on the side mix sour cream, greek yogurt, vinegar, lemon juice, salt, pepper and fresh dill.

Now, take the salad dressing and pour over the cucumbers and onion. It’s just that easy.

Lastly, serve now or leave in the refrigerator for 30 minutes. This is an ideal recipe for people who like to make things ahead of time!

Helpful Recipe Tips

  • My salad is watery after a day, vinegar naturally draws the water out of anything. Cucumbers are primarily water so to fix this you can drain the excess water and remake the dressing. Or, you can add more sour cream and/or greek yogurt to thicken it back up. In the recipe below I included a step that could prevent this by salting the cucumbers.
  • Thickness of veggies, the thinner the more water will end of being released. It will still happen if they are thick but not as easy. 1/4 inch is a great size!
  • Add tomatoes, cucumber tomato salad is very popular and this recipe can easily be adapted.
  • How long does it last, you may get 3 days out of this recipe in the refrigerator. The cucumbers will start to wilt fast so 2-3 days is max.

Ingredients
 

  • 2 sliced cucumbers
  • 1/2 sliced red onion

Cucumber salad dressing

  • 1/4 cup plain greek yogurt
  • 1/4 cup sour cream
  • 3 tablespoon keto granulated sweetener of choice or sugar (I used Lakanto)
  • 2 tablespoon vinegar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt (salt to taste)
  • 1/4 teaspoon black pepper (pepper to taste)
  • 1 tablespoon fresh dill

Instructions
 

  • Slice cucumbers and red onion into 1/4 inch slices. You can peel or not peel cucumber based on personal preference
  • In a bowl salt the cucumbers heavy then place in the refrigerator for an hour. At the 30 minute mark drain the water that has pooled in the bowl. When 1 hour comes drain and rinse the cucumbers to remove the excess salt. Also, place the sliced red onions in a bowl of warm water.
  • With a paper towel light dry the sliced cucumbers. You just want to pat them, it doesn't have to be perfect. Drain the red onions and pat them dry as well.
  • In a bowl combine all ingredients to make the salad dressing. Test, salt to taste and if you'd like to add more sweetener. You can use all sour cream or all greek yogurt if you are missing or want to avoid either of those ingredients.
  • Top the sliced cucumbers and onions with the dressing. Mix around to evenly combine. Serve or refridgerate for at least 30 minutes.
