Enjoy a keto cucumber salad this spring at summer at cookouts, picnics or right at your dinner table. Enjoy this delicious, tangy salad dressing that is naturally low carb and sweetener naturally so free of added sugar.
3tablespoonketo granulated sweetener of choice or sugar(I used Lakanto)
2tablespoonvinegar
1teaspoonlemon juice
1/2teaspoonsalt(salt to taste)
1/4teaspoonblack pepper(pepper to taste)
1tablespoonfresh dill
Instructions
Slice cucumbers and red onion into 1/4 inch slices. You can peel or not peel cucumber based on personal preference
In a bowl salt the cucumbers heavy then place in the refrigerator for an hour. At the 30 minute mark drain the water that has pooled in the bowl. When 1 hour comes drain and rinse the cucumbers to remove the excess salt. Also, place the sliced red onions in a bowl of warm water.
With a paper towel light dry the sliced cucumbers. You just want to pat them, it doesn't have to be perfect. Drain the red onions and pat them dry as well.
In a bowl combine all ingredients to make the salad dressing. Test, salt to taste and if you'd like to add more sweetener. You can use all sour cream or all greek yogurt if you are missing or want to avoid either of those ingredients.
Top the sliced cucumbers and onions with the dressing. Mix around to evenly combine. Serve or refridgerate for at least 30 minutes.
