Cut strips of bacon into pieces and slice onion up as well. Place frozen cauliflower rice bag in the microwave and drain excess water when it's finished.
With pan on medium high heat begin to crisp bacon and after the bacon has released some fat into the pan toss in onions to caramelize
Lower heat if pan starts to get too hot you don't want to burn the bacon or onions.
Once bacon and onions have a great color to them toss in cauliflower rice. Season with salt and pepper. Then toss butter on top and continue to mix everything together.
Cauliflower rice will absorb all the bacon fat in the pan so no need to drain. Cook for about 3-5 minutes and remove from heat.
Scramble or fry your eggs however you like and top the dish off with them. Sunny side up seemed to work the best but scrambled is always super easy
