Dirty rice stuffed bell peppers are easy and super tasty. Dirty rice that’s flavor packed is stuffed into bell peppers then topped with cheese for a simple weeknight dinner recipe!
Recipe Highlights
- How they taste: Bell peppers are only delicious when the filling is amazing. This dirty rice is super simple but packs all the flavors necessary to blow your family away. The ground beef and sausage mix beautifully for a little spice and savoriness. The veggies added mixed with the spices add their touch of sweetness and herby notes.
- Skill level: Dirty rice stuffed bell peppers are really easy to make and require little time. They are great when you are short on time like a weekday. A beginner could easily make this recipe for a family.
- Cooking method: The rice and meat are prepared separately while the bell peppers pre-bake in the oven. Then, the veggies are sautéed on the stove stop and the meat is added back in to get a heavy dose of seasonings while simmering in broth. The rice is added into this mix to soak up all the flavors. Next, you stuff the bell peppers, top with cheese then bake.
Ingredient tips
- Meat: Ground beef and the breakfast sausage are a match made in heaven. For variations, to make it more budget friendly you can get away with all ground beef and the recipe will still be delicious. Also, you can swap the breakfast sausage out and use the more traditional andouille sausage but chop it up finely so it can fit into the bell peppers better.
- Bell peppers: You have a few options with bell peppers but green and red really shine for this recipe. The earthiness of the green peppers and the slight sweetness from the red are perfect.
- Rice: The recipe uses long-grain white rice but any rice will work here. Even brown rice if you’re looking to add some extra fiber with the peppers.
- Cheese: You can bake these without cheese but a neutral cheese like mozzarella or Monterey Jack are great. Cheddar can work but it does produce a strong flavor that will fight with some of the flavors in the dirty rice.
Storing or making ahead
You can actually make these bell peppers ahead of time and freeze them to cook later. Just don’t add the cheese until ready to cook but you can put them together then finishing baking them when ready to serve since the dirty rice is cooked separately in the beginning.
