Important tips before starting the recipe

  • Why there is no cream cheese in this crack chicken noodle soup recipe. The noodles are boiled in the soup. Cream cheese is best added in the beginning then slowly pour liquid in so that it mixes well. The issue is cream cheese is dairy and if you leave it boiling for 10 minutes for the pasta to cook it will curdle. If you add it after the pasta is done it won’t mix well. Heavy cream is a great substitute because it will mix well and provide a creamy flavor in the soup.
  • Any noodles work in this soup. Angel hair pasta, spaghetti or even bow tie pasta. I personally like rotini but leave it to your imagination and have fun cooking.
  • I recommend shredding your own cheese because store bought cheese has a non-caking agent that prevents the cheese from sticking together. Sadly, it also stops the cheese from melting together properly as well.

Making the crack chicken noodle soup

  1. To start, make sure all the ingredients are ready to add into the soup. Make the chicken and bacon ahead of time or shred a rotisserie chicken then chop the pieces up.
  2. In a large pot or dutch oven on medium high heat with a little oil add in the carrots and celery. Season lightly with salt and black pepper. Once the ingredients become fragrant add in the minced garlic.
  3. Now, toss in the chicken and ranch seasoning packet. Mix everything together then pour in the chicken stock and water.
  4. Bring the water to a boil then add in the pasta. Lower to a simmer and allow the pasta to cook uncovered. This will take about 10-12 minutes.
  5. Then, when the pasta is finished remove from heat and add in shredded cheese. Allow the shredded cheese top melt while you stir the soup. When cheese is melted add in heavy cream. Taste for seasoning you will very likely have to add more salt.
  6. When serving, sprinkle crumbled bacon across the soup. I do not recommend adding the bacon into the soup and letting it sit because the bacon will lose the crunchy texture and become soggy.
