How To Make Brownie Mix Cookies

Ingredients needed

  • Brownie mix
  • Vegetable oil
  • Egg
  • All-purpose flour
  • Chocolate chips (and any other mix-in’s you’d like)

Important tip before making the recipe

Several people have noted, and I’ve seen as well that refrigerating the dough for an hour helps a lot before baking. This gives it time to come together and it releases easily from the cookie scoop and isn’t so sticky.

Making the brownie mix cookies recipe

  1. In a bowl, combine the eggs and vegetable oil. In another bowl, mix the flour with the brownie mix. Combine the dry and wet ingredients then fold in the chocolate chips.
  2. Cover and refrigerate for 1 hour but you can bake immediately if the dough feels good. If it’s a little sticky, toss the bowl in the fridge for an hour.
  3. Preheat the oven to 350F.
  4. Scoop the dough with a cookie scoop on a lined sheet pan. Place the pan in the oven for 9-10 minutes. When the time is up, remove from the oven and allow to cool.
  5. Once cooled, serve and enjoy.
