Keeping the waffles crispy can be tricky. Do not sit them on a plate. They are best on an wire rack to allow the steam and air to circulate. When you place them on a closed surface like a plate or pan the steam destroys the crispy texture because it cannot escape the waffle.

Look for ripe bananas, just like banana pudding. They are softer and sweeter. They mash easily as well.
Making the banana waffles recipe
- To start, smash up 2 bananas. For 1/2 cup of mashed banana it’ll take 1.5 bananas depending on the size. In a bowl beat the eggs. Then, add in the mashed banana and vanilla. Next, gradually add in the melted butter then the milk.
- In a separate bowl, combine the flour, sugar, baking powder and salt. Combine the dry and wet ingredients.
- Turn on the waffle iron on high. Add in about 1 ladle of batter, this is for a normal size waffle. Close the waffle iron and cook until the waffle is golden and crispy. This can take about 3 minutes.
- Remove the waffle and serve immediately for the best texture. If cooking all the waffles before serving, store the waffles on a wire rack. Note, waffles do cool very quickly. Serve with an extra helping of diced banana and maple syrup.
