To start, smash up 2 bananas. For 1/2 cup of mashed banana it'll take 1.5 bananas depending on the size. In a bowl beat the eggs. Then, add in the mashed banana and vanilla. Next, gradually add in the melted butter then the milk.
In a separate bowl, combine the flour, sugar, baking powder and salt. Combine the dry and wet ingredients.
Turn on the waffle iron on high. Add in about 1 ladle of batter, this is for a normal size waffle. Close the waffle iron and cook until the waffle is golden and crispy. This can take about 3 minutes.
Remove the waffle and serve immediately for the best texture. If cooking all the waffles before serving, store the waffles on a wire rack. Note, waffles do cool very quickly. Serve with an extra helping of diced banana and maple syrup.
