- First, mix together the sauce for the fried rice the set to the side. Next, prep all the ingredients together. For the green onions, cut up the white parts of the onions. In a standard bunch from the store this will be just enough for one serving.
- In a wok or frying pan, add in a little oil then cook the salmon. You do not have to chop it up just cook whole for now. When the salmon is cooked through remove from pan.
- Now, add a little oil then cook the scrambled egg. Once the egg is scramble remove from the pan.
- Then, add in the peas, carrot and green onions. Cook until softened.
- Now, add in the leftover rice, minced garlic and add a little more oil. Cook the rice until it is heated through.
- Next, toss in the cooked salmon and the egg. Now is the time you use the spoon to chop up the salmon and the egg into the rice. Once that is done pour in the sauce you made earlier.
- Quickly mix everything together until everything is coated and colored perfectly then turn off the heat.
- Lastly, taste for salt and pepper once a little cooled. You can also add more soy sauce in the place of the extra salt.

No one will come to your home if you use fresh rice. However, after cooling the rice goes through changes that makes it perfect for fried rice. The starches change and you can fry it properly without squishing the rice.
Can I use any rice?
Yes, well I wouldn’t recommend wild rice for this recipe. Long grain or jasmine work well but my personal favorite is basmati.
