Making the potato tacos using a sheet pan

  1. Preheat the oven to 400F.
  2. Next, wash and dry the potatoes because you will use the skins. Dice them up into smaller cuts.
  3. Mix together the spice rub and toss the diced potatoes in the rub along with the oil.
  4. Now, oil the sheet pan as well, you will bake them directly on the pan. Next, place the seasoned potatoes on the sheet pan and put them in the oven.
  5. Depending on how small you diced, the potatoes will take about 20 minutes to bake. You can shake the pan and let them bake a little longer for extra crispiness but be careful not to overdo it.
  6. Lastly, spoon the potatoes and build your tacos.
