Ingredients
 

  • 1.5 pounds russet potatoes, diced
  • 2 tablespoon cooking oil (preferably vegetable oil)
  • street tortillas for serving

Spice rub

  • 2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400℉.
  • Next, wash and dry the potatoes because you will use the skins. Dice them up into smaller cuts.
  • Mix together the spice rub and toss the diced potatoes in the rub along with the oil.
  • Now, oil the sheet pan as well, you will bake them directly on the pan. Next, place the seasoned potatoes on the sheet pan and put them in the oven.
  • Depending on how small you diced, the potatoes will take about 20 minutes to bake. You can shake the pan and let them bake a little longer for extra crispiness but be careful not to overdo it.
  • Lastly, spoon the potatoes and build your tacos.
