- Pancake mix
- Egg
- Milk
- Butter
- Blueberries
- Granulated sugar
- Vanilla extract

You can add any mix-in you’d like for the muffins. I used blueberries but any fruit or even chocolate can be used. You can also omit any add-in’s if your family likes to keep things simple.
Making the pancake mix muffins recipe
- Preheat the oven to 400F.
- In a bowl, whisk the eggs while gradually adding the melted butter. Then, whisk in the vanilla extract and milk.
- Add the pancake mix and sugar into a bowl then combine with the wet ingredients. In a small bag, toss the blueberries in 1 teaspoon of pancake mix to keep them from sinking.
- Line the muffin pan. Fold in the floured blueberries into the batter then fill the muffin cups 3/4 the way up. Place the filled muffin cups into the oven for 12-15 minutes. Times will vary from oven to oven but a toothpick should come out clean if inserted in the middle.
- Remove the muffins from the oven. Lastly, allow them to cool before serving.
