Ingredients
 

  • 2.5 cup pancake mix
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 tablespoon butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 pint blueberries, tossed in flour

Instructions
 

  • Preheat the oven to 400℉.
  • In a bowl, whisk the eggs while gradually adding the melted butter. Then, whisk in the vanilla extract and milk.
  • Add the pancake mix and sugar into a bowl then combine with the wet ingredients. In a small bag, toss the blueberries in 1 teaspoon of pancake mix to keep them from sinking.
  • Line the muffin pan. Fold in the floured blueberries into the batter then fill the muffin cups 3/4 the way up. Place the filled muffin cups into the oven for 12-15 minutes. Times will vary from oven to oven but a toothpick should come out clean if inserted in the middle.
  • Remove the muffins from the oven. Lastly, allow them to cool before serving.
