Ingredients you’ll need to start
- Beef stew meat
- Whole peeled tomatoes
- Potatoes
- Tomato paste
- Celery
- Carrots
- Onion
- Garlic
Best potatoes for the Hawaiian beef stew
In the recipe I used yellow potatoes. It doesn’t really matter because in the end the potatoes are over-cooked and they break down and mix into the stew themselves.
White potatoes will give it a more starchy flavor and the red or yellow will be much more mellow and buttery.
Making the Hawaiian beef stew recipe
- To start, in a large pot, you want to sear the beef stew meat. Just a side or two to give it some color then remove it from the pot.
- Next, toss in the chopped carrots, celery, onion and garlic. Cook them all until soft and fragrant. Season with salt and pepper as you go.
- Now, add in the tomato paste. Cook the paste with the ingredients in the pot about 30 seconds then move to the next stew.
- Add in the diced potatoes, peeled tomatoes and the seared beef.
- Next, pour water just under the top of the ingredients in the stew. Normally, it measures around 2 cups. Bring to a boil then lower to a simmer.
- Cover the pot and allow the stew to slowly simmer for one hour. Once the stew is done allow to cool a bit, taste for salt then serve.

- 4 cloves garlic, minced
- 3 ounce tomato paste
- 1 pound potatoes, roughly chopped
- 28 ounce can of whole peeled tomatoes, drained & rinsed
- 2 cup water
- salt & pepper to taste
