To start, in a large pot, you want to sear the beef stew meat. Just a side or two to give it some color then remove it from the pot.
Next, toss in the chopped carrots, celery, onion and garlic. Cook them all until soft and fragrant. Season with salt and pepper as you go.
Now, add in the tomato paste. Cook the paste with the ingredients in the pot about 30 seconds then move to the next stew.
Add in the diced potatoes, peeled tomatoes and the seared beef.
Next, pour water just under the top of the ingredients in the stew. Normally, it measures around 2 cups. Bring to a boil then lower to a simmer.
Cover the pot and allow the stew to slowly simmer for one hour. Once the stew is done allow to cool a bit, taste for salt then serve.
