Ingredients
 

  • 1 pound beef stew meat
  • 3 ribs celery, minced
  • 1 medium yellow onion, diced
  • 2 large carrots, minced
  • 4 cloves garlic, minced
  • 3 ounce tomato paste
  • 1 pound potatoes, roughly chopped
  • 28 ounce can of whole peeled tomatoes, drained & rinsed
  • 2 cup water
  • salt & pepper to taste

Instructions
 

  • To start, in a large pot, you want to sear the beef stew meat. Just a side or two to give it some color then remove it from the pot.
  • Next, toss in the chopped carrots, celery, onion and garlic. Cook them all until soft and fragrant. Season with salt and pepper as you go.
  • Now, add in the tomato paste. Cook the paste with the ingredients in the pot about 30 seconds then move to the next stew.
  • Add in the diced potatoes, peeled tomatoes and the seared beef.
  • Next, pour water just under the top of the ingredients in the stew. Normally, it measures around 2 cups. Bring to a boil then lower to a simmer.
  • Cover the pot and allow the stew to slowly simmer for one hour. Once the stew is done allow to cool a bit, taste for salt then serve.
