English Pea Salad
Ingredients
- 16 oz frozen peas
- 1/2 medium red onion, diced
- 8 slices bacon, chopped
- 4 ounce cheddar cheese, cubed
Dressing
- 1 cup mayo
- 1 tablespoon balsamic vinegar
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- First, cook the bacon. The best way to me is baking according to the directions on the package. Remove from the oven, drain the excess fat and chop up into small pieces. Also, dice the red onion as well.
- Once the bacon is done cooking remove the frozen peas from the freezer.
- In a small bowl, add mayo, balsamic vinegar, apple cider vinegar, salt and black pepper. Give a good mix.
- It's best to cut the cubes of cheese from a block. Chop the cheese into small cubes and toss into a large bowl.
- In the bowl, add the frozen peas, diced red onion and chopped bacon.
- Then, pour over the dressing you made and give everything an even mix. Taste for salt and black pepper and serve.
