Then, prep the zucchini and the bananas. In a bowl, whisk the eggs with the mashed up banana. Now, add in the butter, vanilla and both sugars. Separately, combine the flour, salt and baking powder. Combine the dry and wet ingredients. Lastly, fold in the zucchini.
Pour the batter into a line baking pan. Place in the oven for 50 minutes. Ovens will vary so start keeping an eye on it around the 40 minute mark and adjust the time where needed.
Once finished, remove from oven and allow to cool before slicing and serving.
