Ingredients

  • 4 tomatillos
  • 5 Chile de arbol peppes, stem & seeds removed
  • 2 guajillo peppes, stem & seeds removed
  • 3 cloves garlic
  • 1 lime, juiced
  • salt to taste

Instructions

  • First, prep the peppers and the tomatillos.
  • For the tomatillos, remove the leaf around them and rinse them because they will be sticky.
  • For the peppers, remove the stem and seeds from the peppers. I highly suggest doing this with a pair of gloves on.
  • Now, turn on a pot of boiling water then place the tomatillos and peppers in and allow them to boil about 10 minutes. You want the tomatillos to turn a pale green but boil too long and they'll burst, try to avoid that.
  • Once everything is softened drain the water. Then, in a blender toss in the garlic along with the softened tomatillos and peppers. Blend everything until smooth.
  • Remove from the blender, add in the lime juice then salt to taste. Lastly, serve.
