Ingredients
 

Wet ingredients

  • 1/2 cup sweet potato
  • 4 tablespoon butter, melted
  • 1.5 teaspoon granulated sugar
  • 2 large eggs
  • 3/4 cup milk
  • 1.5 teaspoon vanilla extract

Dry ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1.5 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • First, you'll need some mashed up sweet potato. You can easily peel and boil one large sweet potato and mashed it up.
  • In the wet ingredients, mix the sugar with the butter and eggs, slowly pour in the milk, vanilla extract. Lastly, add in the sweet potato.
  • Combine the dry ingredients into a bowl then slowly mix them together until combine. There may be a few lumps from the sweet potato but that's fine.
  • Heat the waffle iron and do not add the batter until the iron is hot and ready. Spray lightly with cooking oil then place a ladle of waffle batter in. You should get 5-6 waffles from this recipe.
  • Once the waffles are done.
