Ingredients
 

  • 1 quart strawberries, sliced
  • 10 ounces spinach
  • 1/4 cup walnuts (sub with sliced almonds or pecans)
  • 1/2 cup feta, crumbled
  • salt & pepper to taste

Dressing

  • 1/4 cup balsamic vinegar
  • 3 tablespoon olive oil
  • 2 tablespoon honey
  • 1 tablespoon poppyseeds
  • 1 teaspoon dijon mustard

Instructions
 

  • First, mix dressing then set to the side. You can add to a container to shake for better mixing or using an emulsion blender.
  • Slice up the strawberry and remove the stems from them.
  • In a large salad bowl, add the strawberries and spinach into the bowl. Then pour in the dressing and mix it in well with the strawberries and spinach.
  • Next, fold in the walnut and crumbled feta cheese.
  • Lastly, add salt and pepper to taste.
