First, season the steak with salt and pepper. For a more Mexican vibe you can also use the spice rub from my carne asada. Cook and sear the steak on a high heat to the desired doneness.
Now, chop up the romaine lettuce, halve the cherry tomatoes, and slice the cucumbers.
In a small bowl mix together the ingredients for the salad dressing.
Next, in a large salad bowl, add all the ingredients minus the steak. Before adding the steak, slice the steak with the grain, then toss in with the other ingredients.
Pour the dressing over the salad then toss everything. Lastly, add in the crumbled feta cheese and toss with the rest of the ingredients.
Before serving I suggest you taste for salt and pepper.
