Steak Salad

A super easy steak salad recipe for your next summer get together with a delicious red wine vinaigrette dressing.

Ingredients

  • 1-2 pound skirt or flank steak
  • salt & pepper to taste or see directions

Salad portion

  • 3 head romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 medium red onion, diced
  • 1/2-1 cup feta cheese, crumbled

Dressing

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoon dijon mustard

Instructions

  • First, season the steak with salt and pepper. For a more Mexican vibe you can also use the spice rub from my carne asada. Cook and sear the steak on a high heat to the desired doneness.
  • Now, chop up the romaine lettuce, halve the cherry tomatoes, and slice the cucumbers.
  • In a small bowl mix together the ingredients for the salad dressing.
  • Next, in a large salad bowl, add all the ingredients minus the steak. Before adding the steak, slice the steak with the grain, then toss in with the other ingredients.
  • Pour the dressing over the salad then toss everything. Lastly, add in the crumbled feta cheese and toss with the rest of the ingredients.
  • Before serving I suggest you taste for salt and pepper.
