First, chop the steak bites into large chunks. Note, they will shrink when cooking.
Season the chopped steak bites with coarse salt and pepper.
In a frying pan or cast iron on medium high heat add a little oil then place the steak bites in. Leave about an inch between them, do not crowd the pan. Allow them to sear and cook to the temperature you personally like. Cook in batches if needed but do not crowd the pan or add butter at this moment.
When they are finished lower the heat to medium and remove them all from the pan, see helpful tips. Now, add in the butter, parsley and garlic to the pan. Cook until the garlic browns.
Now, continue to cook until you notice the butter has thickened into a sauce. Turn the heat off then add the cooked steak bites back into the pan. Baste and toss them in the garlic butter sauce, serve.
