First, if the salmon has skin remove it. Next, slice the salmon into nuggets. Do not go too big because you want the salmon to finish cooking by the time to breading is done.
Now, season the salmon with the seafood seasoning. Then grab 2 plates and a bowl and set up your breading stations. One plate add flour and seasoning, second plate add the breadcrumbs and in the bowl add a beaten egg and milk.
Now, roll the salmon biggest in the flour and seasoning. Then, dip into the egg wash and then roll into the breadcrumbs. For a thicker breading you can repeat the last two steps.
In a frying pan add oil and bring up to a temp around 300℉. Place the breaded salmon nuggets in. When you notice browning flip the nuggets over. Continue cooking until the breading is golden brown.
Allow to cool a bit before serving.
