Ingredients

  • 2 pints cherry tomatoes, halved
  • 3 cloves garlic
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • salt & pepper to taste

Instructions

  • Preheat the oven to 400℉.
  • Now, half the cherry tomatoes then toss in oil and add salt and black pepper.
  • Oil the sheet pan then lay the tomatoes cut-side down. Place the whole garlic cloves in the sheet pan as well to roast those.
  • Bake for 25 minutes in the oven.
  • Transfer the roasted tomatoes and garlic to blender or a bowl to use an immersion blender. Then blend the garlic and tomatoes together until smooth.
  • Add in the balsamic vinegar, chopped basil then salt and black pepper to taste before serving.
